A row of late-night cafés is lengthening breakfast for the early shift. Kitchens that opened at eight now plate eggs at six, aimed at hospital staff and depot workers who were eating from a packet on the bus.
The menu is short on purpose. Eggs, bread, fruit, tea. The owner of the first café to switch said a long breakfast menu at six in the morning needs more hands than the hour can pay. A short one can be cooked by the person who is already there to receive the bread delivery.
What happens next
Regular night customers, who think of these rooms as a place that starts after ten, have been mildly offended. The lights are brighter at six. The music is off. One café posted a note explaining that the room can be two things and still close for a cleaning hour in between.
If the early service is still full in three weeks, a second cook will be hired. Until then the owner is the second cook.
